Caribbean rum cocktail recipes

Enjoy a taste of the Caribbean thanks to these delicious rum cocktail recipes, all courtesy of some of our favourite hotels and resorts!


Tropical Splash

Thanks to Nisbet Plantation Beach Club, Nevis

Ingredients
2 oz dark rum
1 oz passion fruit juice
1 oz cranberry juice
1 oz pineapple juice
2 oz strawberry puree
Splash of lime juice
6-8 fresh mint leaves
1 strawberry (for garnish)
1 orange slice (for garnish)

Method
1) Fill a cocktail shaker halfway with ice.
2) Add all the ingredients to the shaker.
3) Shake until well mixed and pour into a tall glass.
4) Garnish with fresh mint, a strawberry and slice of orange.

Planter’s Punch

Ingredients
1.5oz Myers Rum
0.5oz Sugar syrup
0.5oz Lime juice
Dash Angustura Bitters

Method

Mix all the ingredients together in a high ball glass.

Bird of Paradise

Ingredients
1 shot vodka
1 shot melon liqueur
1/2 shot triple sec
Dash of lime
Dash of sugar syrup

Method
1) Pour ingredients into a cocktail shaker with ice.
2) Shake well.
3) Serve in a martini glass with a slice of lemon and a cherry.

East Meets West

Thanks to Little Good Harbour & The Atlantis, Barbados!

Ingredients
1oz Mount Gay Rum
1oz Coconut Cream
3oz Grapefruit Juice
3oz Orange Juice
A dash of Brandy
A dash of Orange Curacao

Method
1) Mix all the ingredients together in a jug.
2) Serve over crushed ice and garnish with a cherry.

Spice Island Classic

Thanks to Spice Island Beach Resort, Grenada!

Ingredients & Method
1) Add ¼ oz of Sorrell concentrate to a chilled Champagne flute.
2) Top up with sparkling wine and serve.

The Island Special

Thanks to Young Island, St Vincent & The Grenadines!

Ingredients
1 oz dark rum
1 oz Sunset Very Strong Rum (or any white rum)
2 oz passionfruit juice
2 oz pineapple juice
½ oz lime juice
2 shots Angostura bitters
2 dashes Grenadine syrup
1 pinch grated nutmeg

Method
1) Mix ingredients together.
2) Serve over ice in a 13 oz cocktail glass.
3) Garnish with a cherry and a slice of lime.

Golden Jubilee

Ingredients
1.5 oz Mount Gay Eclipse Rum
1.5 oz Malibu Rum
3 oz Mango Puree
3 oz Mango Juice
1 Lemon Wedge
Golden Cane Sugar for the rim

Method
1) Wipe the rim of a martini glass with the lemon wedge, then twist the rim in a small plateful of cane sugar.
2) Combine the rums, mango puree and mango juice in a cocktail shaker with ice.
3) Shake, then strain into the martini glass up to the rim.

Caribbean Fantasy

Thanks to Curtain Bluff, Antigua!

Ingredients
1 oz of Cavalier or English Harbour Rum
3 oz Pineapple juice
A dash of cream of coconut
A touch of Grenadine cream
Ice

Method
1) Pour all the ingredients into a blender with the ice and whizz together for just a few seconds.
2) Pour into a tall cool glass and garnish with a cherry and pineapple.

Hanna’s Crystal Passion

Thanks to East Winds, St Lucia!

Ingredients
1 oz Crystal Lime Rum,
0.5 oz Orange Bliss Rum Liqueur,
0.5 oz Blue Curacao,
Flesh of 2 ripe passion fruits,
1 tsp tamarind paste,
Squeeze of fresh lime juice,
Slices of lime to garnish.

Method
1) Add all the ingredients except the Blue Curacao into a cocktail shaker.
2) Shake to mix thoroughly then pour into a cocktail glass.
3) Finish by gently pouring the Blue Curacao over the cocktail and garnish with a slice of lime.

The classic Bajan Rum Punch…

Follow the rhyme to recreate the flavours of Barbados: One of sour, two of sweet, three of strong and four of weak

Ingredients
1 cup lime juice
2 cups sugar syrup
3 cups dark rum
4 cups soda water
Dash Angostura Bitters
Grated nutmeg
Slices of lemon

Method
1) Combine all the ingredients in a jug and stir well.
2) Pour into glasses filled with ice.
3) Sprinkle nutmeg over the top and garnish with a slice of lime.
