Start with: Kingfish Ceviche- A Kingfish fillet cooked in cacao pulp, coconut milk, chilli and lime pickle served with a cacao nib flatbread.
Indulge in: Confit of Duck- A leg and breast duck confit served with a local orange and Rabot Estate bitter dark chocolate sauce, white chocolate mashed potato, plantain crisps and carrots.
Something a bit lighter? Try the Mahi Mahi Salad served with a green coconut jelly, local pickled cucumber, flowering herbs, limed cacao nib oil dressing and creme fraiche.
Finish with: The Chocolate Genesis; a sumptuous nine stage tasting plate starting with truffles and rounding up with a shot of drinking chocolate.

Accommodation at Boucan by Hotel Chocolat is crafted from local wood and stone, the lodges are lovingly crafted and offer each guest a private verandah to watch the sunset from their rocking chairs!
